Kitchen Conundrums: 3 Ingredient Strawberry Jam

As thankful as I am to welcome the lovely showers; winter is coming in a couple of months and so will the lovely strawberries. I cannot let the season go without making use of one of my favourite fruits and make strawberry jam.

If  you do not really have much time to make anything elaborate just cook up a very simple but super delicious 3 ingredient jam.

Yields: 400 gms

Prep time: 20 Minutes

Total time: 4 Hours

INGREDIENTS

  1. 1 kg of fresh strawberries
  2. 2 cups or 400 gms regular sugar
  3. 1.5 tsp of fresh lime juice

METHOD

Wash and dry the berries thoroughly

Pit them and cut them into quarters

Add 2 cups of sugar to the strawberries and mix thoroughly.

Let it soak for about 3-3.5 hours so that the fruit releases all its juices.

Start cooking the strawberry mixture on a medium-high heat.

Use a heavy bottom pan to avoid sticking

Take a Potato masher and mash the berries once they have completely softened.

I like to leave it a little chunky and get strawberry bites while eating.

Finally, take it off heat at this consistency and add a teaspoon of the juice of a freshly squeezed lime

This acts as a pectin substitute and also brings down the chances of attracting bacteria.

Taking it off at this consistency is ideal as the jam thickens even more once it cooled.

Once it is completely cooled fill it into a very clean, sterilized and 100% dry glass jar to ensure longevity. This can last up to 3 months if maintained in the refrigerator under hygienic and dry condition.
